Potato Onion Soup

     My daughter-in-law made a great soup for us yesterday. It was a sweet potato and leek soup. It got my creative juices working. I used her puree as a last step on my own recipe. This is a potato soup with a bean puree to make it creamy. No added calories because the smooth texture is not heavy cream.

6-8 strips of bacon, diced in small pieces
1 sweet onion, diced
4-6 red white potatoes, cubed
2 cans of chicken or vegetable broth

Cook the bacon and onion together until the bacon is crisp and the onions are translucent.


                          Add the potatoes and broth and simmer until the potatoes are tender.


      Take one can of Cannellini white kidney beans and puree them in a blender or handheld blender












                           Add to potatoes along with, 2 teaspoons salt, 1/2 teaspoon black pepper.

The finished product is flavorful and nutritious.
